East Coast-Inspired Pizza in Seattle

Grickey’s Pizza is a small Seattle-based pizza project focused on simple, well-made pies. The style is NY-inspired: 10” pizzas with long-fermented dough, baked hot for a crisp bottom and a balanced, sliceable crust.

The menu is intentionally small - classic combinations like cheese, pepperoni, sausage, mushroom, and marinara, with the option to add hot honey. The goal isn’t a long list of toppings, but getting the fundamentals right every time: good dough, good sauce, good cheese, and careful baking.

Each pizza is made by hand and baked to order. Dough is fermented slowly for flavor and texture, and the process is designed to keep the pizza light, structured, and easy to eat a slice at a time.

Grickey’s Pizza operates at farmers markets, private events, and catered gatherings around Seattle. It’s a solo-run operation built gradually and deliberately, with a focus on consistency, quality ingredients, and straightforward pizza done well.
